These vegan homemade star crunch will take you right back to elementary school lunches. When I was a little kid my mom always packed the best lunches- PB&J loaded with creamy peanut butter and grape jelly, an shiny apple or perfectly ripe banana, a fruit punch Capri Sun or Sunny Delight, and the absolute star of the show was finding out which Little Debbie snack cake she had packed me for that day. Nutty Buddy’s were always a favorite, oatmeal cream pies were okay I guess, but my ultimate favorite was always Star Crunch. So when I started adding in more plant based meals to my vegan curious baking, I knew I had to create a vegan star crunch recipe because- nostalgia!

Key Ingredients In Vegan Homemade Star Crunch
- Kellogg’s Rice Krispies Cereal- store brand will work too, but I feel like I get the best crunch with Kellogg’s.
- Vegan Butter- Melt Organic Plant Butter Unsalted is my favorite, but if you can’t find it any vegan butter will do. If you use salted, just omit the salt called for in the recipe.
- Vegan Sweetened Condensed Milk (like Nature’s Charm sweetened condensed coconut milk)
- Vegan Chewy Caramels (like Cocomels)
- Cocoa Powder
- Vegan Mini Marshmallows (like Dandies vegan marshmallows)

How To Make Homemade Star Crunch (Vegan)
To make homemade star crunch you start by combining vegan butter, sweetened condensed coconut milk, cocoa powder, and chewy caramels in a large saucepan on low heat and stir constantly until the butter and caramels are fully melted. Next you add the plant based mini marshmallows, vanilla extract, and salt and stir until the marshmallows are fully melted. Then you remove the mixture from the heat and stir in the Rice Krispies. Use a cookie scoop to scoop out portions of the mixture onto a parchment lined baking sheet that’s been coated in baking spray, then chill for at least an hour and you’re left with amazing plant based homemade star crunch snacks everyone will love!
Storage: store leftover homemade star crunch in a zip top bag in the fridge for up to 1 week.

Ingredients
- 1/4 cup vegan butter, unsalted (like
- 3 tbs cocoa powder
- 6 oz sweetened condensed coconut milk (like
- 18 vegan chewy caramels (like
- 1/2 tsp vanilla extract
- pinch of salt
- 5 oz of vegan marshmallows (like
- 3 1/2 cups Rice Krispies Cereal
Instructions
- Line a large cookie sheet with parchment paper, then spray with baking spray.
- Start by combining vegan butter, sweetened condensed coconut milk, cocoa powder, and chewy caramels in a large saucepan on low heat and stir constantly until the butter and caramels are fully melted.
- Next you add the plant based mini marshmallows, vanilla extract, and salt and stir until the marshmallows are fully melted.
- Then you remove the mixture from the heat and stir in the Rice Krispies.
- Use a cookie scoop to scoop out portions of the mixture onto a parchment lined baking sheet that’s been coated in baking spray. Wet your fingers and press down the centers of the cookies to get the star crunch shape.
- Then chill in the fridge for at least an hour and you’re left with amazing plant based homemade star crunch snacks everyone will love!
