Vegan Rotel Dip

As a kid I would make Rotel Dip almost every day after school. I’d grab a hunk of velveeta and can of Rotel and microwave them until a creamy sauce formed that I could dunk tortilla chips into. In my series “90s Eats” I’m veganizing some of my childhood favorites, so you know Rotel had to make the list.

To make Vegan Rotel Dip we first make a vegan cheese sauce then combine it with Rotel tomatoes. It’s quick and the result is a delicious dip with all the nostalgic flavor you remember.

Key Ingredients

Silken Tofu
Silken Tofu mimics the creamy texture of Velveeta in this recipe. I love the Sprouts Tofu and keep it on hand most of the time. Any silken tofu will work, you just need 16 ounces of it.

What is Nutritional Yeast?
Nutritional yeast, or “nooch” is a dehydrated yeast product that comes in the form of flakes and is often used in vegan cheese making because it has a naturally cheesy flavor. It is essential to this Vegan Rotel Dip recipe.

Rotel Tomatoes
If you’re from the South like me, then Rotel tomatoes are a staple in your house. For this recipe I prefer the Original flavor, but the Hot variety is great for adding a little more spice to your Rotel dip.

Tips for Making Vegan Rotel Dip

Be cautious when heating the dip because it can form bubbles and pop. I prefer to cook it in the microwave in 15 second increments until heated through because the stovetop always pops on me!

Blend all your ingredients until the sauce is nice and smooth.

Use Rotel brand diced tomatoes for the best flavor and don’t drain them!

Serve with high quality tortilla chips that are sturdy enough for dipping.

How to Make Vegan Velveeta Cheese

To make vegan velveeta cheese combine silken tofu, vegan beef flavored bouillon in water, nutritional yeast, salt, and garlic powder in a high powered blender and blend until smooth.

How to Make Vegan Rotel Dip

Add the vegan velveeta cheese dip you just made to a microwave safe dish along with one can of Rotel tomatoes, not drained. Stir until fully combined, then heat on high in 15 second increments until heated through. Enjoy with sturdy tortilla chips.

This 90s classic reimagined with a plant based twist.

Ingredients

  • 1 (16 oz) package of Silken Tofu
  • 1/4 cup Nutritional Yeast
  • 1 tsp Garlic Powder
  • 1/4 tsp Salt
  • 1 Vegan Beef Flavored Bouillon cube
  • 1/4 cup Hot Water
  • 1 (10 oz) can Rotel Original Tomatoes

Instructions

  1. Whisk together the beef flavored bouillon cube and hot water. Set aside.
  2. To a high powered blender add the silken tofu, nutritional yeast, garlic powder, and salt, and prepared beef flavored broth. Blend on high until completely smooth.
  3. Pour the cheesy sauce from the blender into a large microwave safe bowl. Then add the Rotel tomatoes to the bowl and stir until the sauce and tomatoes are fully combined.
  4. Heat in the microwave on high in 15 second increments until the dip is heated through.
  5. Enjoy with sturdy tortilla chips.
  6. Store any leftovers in an airtight container for up to three days.
